The flat surface is perfectly smooth, saturated with black gems. This universal symbol of luxury is the effect Jacob & Co. recreated with the Caviar Tourbillon. Caviar Tourbillon is a showcase of the high jewelry expertise of Jacob & Co., applied to a high watchmaking timepiece. Caviar Tourbillon is entirely covered in gems. They're not round, as brilliant-cut gems can't entirely fill any space. Jacob & Co. exclusively selected the baguette cut. In order to recreate the smooth surface of caviar, Jacob & Co. only works with the invisible setting technique. No prongs, no metal appears that would break the continuous array of gems. The 47-mm case is covered in 224 baguette-cut gems. The crown contains 16 more and a large rose-cut gem. The large dial is made of a series of concentric rows of 130 baguette-cut gems. White diamonds. Emeralds. Rubies. Blue, icy blue, yellow, pink or orange sapphires. Emeralds. Rubies. Tsavorites. A camouflage-type or rainbow color arrangement. Caviar Tourbillon is 424 gems exploding with light.

From a creative concept to design inspiration. To the first stroke of a pencil through hundreds of iterations. A timepiece like no other comes to life. Caviar Tourbillon recreates the luxurious, tight appearance of a freshly opened tin of caviar with 424 invisibly-set baguette-cut gems.

Caviar Tourbillon is a work of both high jewelry and high watchmaking. It requires a movement that's as exclusive as its appearance. Caliber JCAA43 has been developed to give Caviar Tourbillon this dual nature. It's regulated by a one-minute flying tourbillon, visible through an opening on the dial. Its constant rotation is the mechanical life in Caviar Tourbillon. Made up of 216 components, it is a self-winding movement. This is a configuration rarely used by Jacob & Co., but in this case, it has an obvious purpose. While it winds the movement, it spins and becomes a vehicle of white light. Much like the case and dial of Caviar Tourbillon are packed with gems, so is caliber JCAA43. When looked through its sapphire caseback, the movement exposes an extensive, overwhelming setting of 338 brilliant-cut diamonds. The bridges and openworked rotor are entirely covered in them.

Gravity naturally has a negative impact on a movement's accuracy. By putting its escapement into a constant spin, the tourbillon counteracts this natural defect.
